We’re gearing up for the busy winter season in Vail, and we're looking for experienced Sushi Cooks who love Japanese cuisine and take real pride in their craft.

What the Job Looks Like

You’ll be working directly on our sushi station, keeping things moving smoothly during busy services:

• Filleting, slicing, and portioning fresh fish with precision knife work.
• Prepping and plating sushi and sashimi to hit our exact recipes and presentation style.
• Keeping a close eye on seafood freshness, proper temperature storage, and inventory.
• Maintaining a clean, organized, and sanitary station throughout your shift.

What We Need From You

• Hands-on Experience: Previous work as a Sushi Cook in a busy, high-volume restaurant or sushi bar.
• Solid Techniques: Confidence with knife skills, raw fish handling, and sushi terminology.
• Teamwork: A good attitude, flexible schedule (evenings, weekends, holidays), and the ability to stay in sync with a big kitchen team.
• H-2B Status: Must currently be in the United States on an H-2B visa and eligible to transfer to a new employer.
