We’re bringing Checho’s authentic Mexican flavors to Newcastle, and we’re looking for a passionate Head Chef or Sous Chef to help us build something special from day one.

What the Role Looks Like

You’ll be leading the kitchen line—preparing everything from bold, fresh tacos and starters to high-end steaks. Beyond service, you’ll handle day-to-day kitchen operations, keep stock tight, work on seasonal menu ideas, and mentor the team.

Never cooked Mexican food before? No problem.

You don't need prior Mexican culinary experience. Before we open the doors in Newcastle, we’ll send you to train at our established Sydney location. We’ll teach you our exact recipes, techniques, prep systems, and service standards so you feel 100% confident running the Newcastle kitchen on opening night.

What We’re Looking For

• Kitchen Experience: A solid background in a commercial kitchen with strong leadership potential.
• Passion & Drive: Someone eager to learn, detail-oriented, and ready to take real ownership of the kitchen.
• Team-First Mindset: Great communication skills and the ability to keep your cool when service gets busy.
• Work Rights: Australian work rights preferred, but visa sponsorship is fully available for the right candidate who demonstrates the right skills and commitment.
